The cuvée Chassenoys is made from old Sauvignon vines (over 30 years old) planted on clay-limestone soils. Harvesting is manual with low yields. It is a discreet wine that reveals a succession of fine and subtle fruits. The balance in the mouth is perfect while flexibility and roundness.

Potential of guard: 8 to 10 years

Crab, lobster and other crustaceans; oysters, mussels and other shellfish; light, flaky fish; and salads. Fresh goat cheeses, creamy Brie, triple creme cheeses, ricotta, feta and Parmigiano-Reggiano

Serving temperature: 11 to 13 °C.
