Domaine Henri Audiffred
"Domain Audiffred is a family business since 1965. After the retirement of Bernard Audiffred in 2007, it has been managed by Henri and Henriette Audiffred. The Domaine has 5 hectares located from Gevrey-Chambertin to Pommard.
The grape is exclusively Pinot Noir for red wine and Pinot Blanc for Beaune blanc.
The method of culture is traditional and natural, without chemical fertilization of the soil, nor weeding. Only a regular tilling is practised.
The vines are managed by “lutte raisonnée”, without using insecticide.
The wine making is done by cold start (without yeast) which implies long cuvaisons from 15 to 18 days, in wooden tanks. The watering, the reassembly and the pigeage are done 3 times per day.
The “elevage” lasts 16 to 18 months out of oak barrels. During this period, 2 rackings are made. The wine is bottled at the domaine manually, without any filtering apart from the Beaune Blanc (so a slight deposit may appear). Their production is primarily sold in bottles, in France and in the various countries of the European Union.
