The theme of this dinner was an almost unique pairing of modern Cantonese cuisine from the Chao Zhou region, created by Chef Cai, with rare Burgundy wines. Two important sessions were required to perfect these food and wine pairings between Chef Cai’s cuisine and the white and red wines produced by iconic estates in Burgundy today.
